The essential originality of Barsac Sauternes winemaking lies first and foremost in the way the grapes are harvested. Normal ripeness is not enough,
You have to wait for the grapes to “over-ripen”, and for a rot so special, so particular to the climate, that it has been called “noble rot”.
It is caused by a characteristic mycoderm: “Botrytis Cinerea”, the tiny fungus that, in great years, produces the famous “roast” recognizable in old bottles.
Today, Jerry & Elena DAVID are passing on their know-how to their son and daughter-in-law, Jonathan & Marie-Amélie, to ensure continuity. Together, they want to continue the evolution of the estate, adapting to new techniques while respecting our environment.
Together, they want to guarantee their customers a quality wine that respects biodiversity, the environment and, above all, the future of us all.
